There are quite a few different varieties of Irish whiskey. Single malt is made from 100% malted barley and distilled in a pot still. On the other hand, grain whiskey is made from grains and distilled in a column still. Pure pot still whiskey is a uniquely Irish variety and is made of 100% barley that is mixed malted as well as unmalted before being distilled in a pot still. The Old Bushmills Distillery claims to be the oldest licensed distillery in the world after gaining its licence from James I in 1608.
